Artisanal mezcal jima involves the manual cutting of ripe stalks by expert jimadores to extract the agave piñas, preserving their quality and distinctive flavor.

Cooking
The artisanal process of cooking mezcal in a conical stone oven consists of slowly cooking the agave piñas covered with stones heated over direct heat, which releases the natural sugars and gives the characteristic smoky aroma and flavor to the distillate.

Milling
Horse-drawn quarry tabona grinding involves crushing agave piñas with a horse-drawn quarry stone, a traditional method that releases the essential juices of the agave, adding a touch of authenticity and character to the mezcal distillation process.

Fermentation
